Bone broth is one
of the best drinks suggested to
have for most of Ketogenic resources on
the internet.
So I bought 2
kilos of bones and decided to try.
Materials:
2kg caw bone (
you may use any animal bones) There were slightly meat pieces on bones.
Water( I used as
much water to cover the bones surface) Around 2litres.
Salt
Apple cider
vinegar
Black pepper,
garlic, daphne tree leafs,rosemary
Directions;
Bleaching;
I have washed the
bones and placed into a large bowl.
Added water untill covering the bones.
Added 1 water
glass of apple cider and waited 30min.
This procedure
called bleaching. According to internet
sources ,heat tightens the pores
of bones and slows down the collagen get
out while boiling. So they do bleaching to open pores before boiling.
Boiling the first water then grilling the bones in
oven
After bleaching,
I poured the water and placed the bones
into pot.
Added around 2litres
of water ( enough to cover bones surface)
Boiled the water
, after boiling around 10 -20 minutes,
stopped the heat and take out the water. Its not suggested to use this first
bone juice. There is also a bit smell which makes it hard to eat or drink.
Take out the
bones from pot , placed into oven tray.
Grilled the bones
in the oven for around 40minutes. Bones are caramelised and a nice yummy smell
came out.
Making the broth
After caramelising
the bones in the oven, placed them into stainless steel pot and added fresh
drinking water.
Closed the cover
and waited untill boiling.
After boiling
started, I reduced the heat to minimum and
slowly simmered the bones untill morning.
Its suggested to keep
it on heat between 24hours -48hours. But
I cant afford that much time just waiting for it.
1 hour before I
close the heat, added salt,black pepper,
garlic, daphne leafs, 3 spoons of apple cider into pot.
Then it was all
ready. There was no water loss during
the simmering.
I tried one
glass, salt was ok but apple vinegar was
better if I have added a bit
more.
At the first
boiling, full kitchen was smelling, on second and real boiling there was no
smell and it was very delicious to drink. Additionally I take the water into
jars to freze in the fridge, I decided to simmer bones once more to get more
out of them.
